  • Preheat the oven to 160°C, grease two 20cm cake tins with coconut oil or line with parchment paper.
  • In a large container, combine the dry ingredients: ground almonds, coconut flour, tapioca flour, marine collagen, baking soda, sea salt and cinnamon.
  • In a separate container, whisk together the eggs, maple syrup, coconut oil and coconut sugar until well blended. Split ½ vanilla pod in half and recover the contents using the blade of a knife
  • Gently mix the dry ingredients with the wet mixture.
  • Pour the batter evenly into both cake pans and bake for 20 minutes or until an inserted knife comes out clean.
